  Is there a way to check-off a check list without applying strikethrough? How can I do this?

  Hi, @fequalma! Currently, there isn’t a way to disable the strikethrough formatting when you are checking off a list. However, I see that we have an open feature request for this, and I made sure to add a vote for it on your behalf.
