Ipencil handwriting not allowed

I usually journal in GoodNotes but am trying out DayOne because it supposed to have more flexibility. I quickly realized I can’t write with my Apple Pencil, it converts it to text which I don’t want. I would like to write in my own handwriting, is this optional ?

The option to convert handwriting to text in the main body of the entry is an Apple feature called “Scribble“. This feature works in any text field on iPad with the Apple Pencil.
