There can be a number of reasons why you’re seeing the coordinates instead of the location labels. But in short, any time when there’s anything blocking the Day One app from looking up something on the internet would prevent the location from getting a name, and instead get coordinates.
To explain, Day One tries to convert those coordinates to a place name by calling Apple code. But if there is a block to these calls to Apple’s location server (due to country block, VPN, etc), it would fail.
If you don’t have any internet connection at the time, that would also be coordinates-only as well.
